Recipe: Chicken Apple Madeira

6 to 8 chicken tenders
3 to 4 apples
6 mushrooms
1 tbs fresh garlic crushed
1 stick unsweetened butter
2 tbs dark brown sugar
1 cup demi glace
3 tbls Madeira wine
Olive oil
Salt & Pepper to taste

Method:

  1. Lightly salt & pepper chicken tenders and drizzle a little olive oil over chicken to coat.
  2. Crush 2 pieces of garlic and dice and place in skillet with olive oil (enough to barely coat bottom of pan)
  3. Saute chicken on medium low heat.  Peel  apples and slice into thin wedges and place in a bowl.
  4. Slice mushrooms and place aside in bowl.  Check chicken on both sides and when ready place on paper towels on plate and set aside.  Using the same skillet cook mushrooms, remove when ready, then apples
  5. Add 2 tbs butter and 2 tbs of brown sugar, cook till soft.  Remove from pan and pour Madeira wine and allow to set for a moment. 
  6. Next add demi glace and mix well, finally add the butter and allow sauce to reduce.Return all ingredients into skillet to coat well with sauce.  Serve with mashed potatoes, asparagus spears or your favorite side dish.
